Ils sont compos\u00e9s d&rsquo;une p\u00e2te fine et croustillante, enrobant une farce r\u00e9alis\u00e9e \u00e0 partir de l\u00e9gumes et\/ou de viande, et assaisonn\u00e9e avec des \u00e9pices comme le curcuma. Les samoussa sont g\u00e9n\u00e9ralement frits dans de l&rsquo;huile v\u00e9g\u00e9tale, jusqu&rsquo;\u00e0 obtenir une jolie coloration brune. Ils sont servis chauds en entr\u00e9e ou en collation, souvent accompagn\u00e9s de chutneys (sauces). Penser aussi \u00e0 bien appuyer sur les c\u00f4t\u00e9s du samoussa, pour \u00e9viter qu&rsquo;ils ne s&rsquo;ouvrent pendant la cuisson.\u00a0<\/li>\n<li><strong>M\u00e9thode de cuisson :<\/strong> Il faut absolument plonger les samoussa dans une huile tr\u00e8s chaude, puis baisser le feu directement et les laisser cuire pendant 10 minutes. Ceci permet \u00e0 la p\u00e2te des samoussa de cuire enti\u00e8rement et de devenir croustillante.\u00a0<\/li>\n<li><strong>Conservation : <\/strong>Une fois cuits, les samoussa peuvent \u00eatre conserv\u00e9s au r\u00e9frig\u00e9rateur dans une bo\u00eete herm\u00e9tique pendant 2 ou 3 jours, puis r\u00e9chauff\u00e9s au four pendant environ 20-30 minutes \u00e0 180\u00b0C. Pour une conservation plus longue, on peut congeler les samoussa avant leur cuisson. Pour cela, placer les samoussa (non cuits) sur un plateau recouvert de papier cuisson, en les espa\u00e7ant un peu, puis couvrir les samoussa avec du film alimentaire. Placer le plateau au cong\u00e9lateur le temps de les congeler. Une fois congel\u00e9s, mettre les samoussa dans un sac de cong\u00e9lation, et les remettre au cong\u00e9lateur.
