Cette \u00e9pice est une r\u00e9sine s\u00e9ch\u00e9e puis r\u00e9duite en poudre, extraite de la racine d&rsquo;une plante herbac\u00e9e poussant notamment en Inde et en Iran.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;ase f\u00e9tide d\u00e9gage une odeur soufr\u00e9e assez forte, jug\u00e9e d\u00e9sagr\u00e9able par certains, mais celle-ci s&rsquo;att\u00e9nue rapidement durant la cuisson. Cette \u00e9pice est g\u00e9n\u00e9ralement utilis\u00e9e en petite quantit\u00e9, ce qui permet d&rsquo;ajouter un go\u00fbt caract\u00e9ristique, comparable \u00e0 celui l&rsquo;ail et de l&rsquo;oignon.
